Sustainable Restaurant Program
Restaurants typically use a great deal of energy, both in their kitchens as well as to keep their dining rooms comfortable for their guests. They also produce tons of food and packaging waste.
Kalpa helps restaurants become more eco-efficient by reducing their inputs while simultaneously reducing their outputs.
Kalpa also works with management to establish a baseline, customize a plan, then report results.
Green Restaurant Workshop
Kalpa recently presented an interactive 90-minute workshop for restaurant managers who were looking for ways to bring sustainable business practices to their workplace.
Kalpa presenters discussed specific ways to reduce energy consumption and decrease costs associated with a restaurant's waste stream.
Some of the topics we covered included ...
- Increase your "Sustainability IQ"
- How to Cut Energy Consumption in Your Restaurant
- Making Sustainable Food Choices
- How To Conserve Water
- Reduce, Reuse and Recycle ...
Kalpa associate Laura Weiss was a co-presenter at the workshop. Laura has 25 years experience in environmental management and sustainability, with expertise in waste management and reduction, sustainable food, responsible procurement and toxics reduction. Laura served as the first regional sustainability manager for a large food service operator on the West Coast.
Sustainability Audit for Restaurants
Kalpa has produced a 120-point Sustainability Scorecard that it uses to provide restaurant owners with specific recommendations on how to green up their business operations. After conducting a 90-minute walk-through of a restaurant, using its Sustainability Scorecard as a guide, Kalpa presents the owner or manager with a report outlining its findings. Specific sustainability recommendations are provided in the following sectors:
- Sustainable Food Procurement
- Waste Reduction
- Energy Conservation
- Water Conservation
- Transportation
- Education and Awareness for Employees and Customers
